The éclair (从 the French for “lightning”) is the classic French pastry — choux pastry shell filled with crème pâtissière (vanilla custard) and topped with a glossy chocolate or coffee fondant. Variations include caramel, pistachio, raspberry, and seasonal flavours, but the chocolate and coffee remain the canonical defaults.
The pastry shell is the test. The proper choux pastry should be light, hollow, and crisp on the outside with a slight chew. Made by cooking flour into a paste with butter and water, then beating in eggs until the dough is glossy and pipeable. The hollow interior is created during baking as the moisture from the eggs evaporates and inflates the shell.
This pastry spot’s éclairs were the proper version. Crisp shells, hollow interiors, properly filled with smooth custard. The fondant on top was the glossy variety (not the dry powdered-sugar glaze) — proper sugar-fondant slightly tinted with chocolate or coffee.
We ordered two different flavours to compare. Probably one chocolate and one of the seasonal or specialty flavours — pistachio, raspberry, or caramel depending on what the spot was running that week.
Chocolate éclair was the classic. Vanilla custard inside, chocolate fondant on top, with the cocoa flavour coming through clean against the cream filling. The kind of pastry that doesn’t try to reinvent the format because the format already works.
The second éclair (whichever specialty flavour) was the variation. Different filling or different fondant, providing the contrast against the chocolate classic.
Drinks were included — typically a coffee or tea each. A long black or a flat white for me; a tea or a milk-based coffee for BB.
At $22 for 2 éclairs + drinks via Burpple Beyond this is fair pastry-shop pricing. Full price each éclair runs $8-10; the deal saves about $5-8.
