Tuesday afternoon — coconut ice cream stop with BB on the way home. We always end up back at the same kind of stall for coconut ice cream because nothing else hits the same way in our weather.

We ordered:

Coconut ice cream is the dessert that should be more popular than it is. Pale off-white, with the faint cream-coloured fibers of young coconut suspended through it, scooped from a tub that’s pulled fresh from the freezer just often enough.

Texture-wise this scoop was the proper soft-churn — denser than soft serve, less icy than commercial ice cream, with the smooth slow-melt of a coconut-cream-based recipe rather than a dairy-cream one. That difference matters because the coconut cream brings its own fat structure to the freezing process, and you can taste it.

Flavour was the headline — unmistakable young coconut sweetness up front, faint vanilla note underneath, and a clean clean finish that doesn’t leave that artificial-coconut soap aftertaste. The kind of scoop you can keep eating without getting tired of.

Toppings are optional — at most stalls you can add roasted peanuts, sweet corn kernels, red bean, attap chee, or grass jelly. We kept it pure this time because the ice cream itself was strong enough to stand alone.

Tropical heat and coconut ice cream is the kind of pairing that doesn’t need optimisation. Just eat it before it melts.
