Tuesday lockdown lunch — pulled the 50% off 2nd portion promo on a fried rice with charcoal-grilled bak kwa and eggs. The lockdown weekday promo deals were one of the few things keeping the delivery rotation interesting.

Bak kwa (Chinese pork jerky) in fried rice is the kind of upgrade move that turns a standard chinese fried rice into something with proper character. The smoky-sweet caramelised charcoal-grilled bak kwa gets diced into the rice, and as it heats through it releases its rendered fat and that signature sweet-soy aroma.

The fried rice base was the chinese-style version — short-grain rice tossed with beaten egg coating each grain, scallion, diced bak kwa, a touch of dark soy and oyster sauce. Cooked in a hot wok so the rice picked up wok hei.

The diced bak kwa was the headline. Each cube had crisp caramelised edges and a soft chewy centre, the way proper charcoal-grilled bak kwa eats. The smoke flavour comes through against the rice’s neutral background, and the slight sweetness from the bak kwa marinade rounds out the savoury.

Eggs were the second layer — scrambled into the rice for the coating, plus a sunny-side fried egg laid on top of each plate. Two egg formats in one dish.

Toppings: chopped scallion, a few sliced pickled chillies for acid.

At $18.46 for two via the 50% off promo, this is fair lockdown delivery pricing. Full price each would’ve been closer to $13-14.
