Bai Nian is the chain that lets you pick your own, and a properly varied set like this is exactly why I like it. The broth was the quiet hero, clear and light with that gentle ikan-bilis-and-soya-bean sweetness, savoury without being salty, the kind you keep sipping.
The win was the variety of textures. The crispy ngoh hiang and fishcake against the spongy tau pok that drinks up the broth, the bouncy fish paste, the soft minced pork, every piece a little different. I dipped each one into the sweet sauce and chilli as I went, alternating with spoonfuls of soup, the proper way to eat it.
Reliable, comforting and well varied for $5.90, the sort of go-to that never disappoints.
