WFH day simple cooking — penne pasta in clear broth with fish balls, sweet corn and lettuce.
WFH day, so I kept lunch simple: penne soup with fish balls. Pantry staples in a metal tin. 😋
What was on the table:
- Two metal mess tins of clear broth with penne pasta (the pantry shape that wasn’t macaroni this week).
- A small army of bouncy fish balls floating on top, five or six per bowl, the soup-bowl essentials.
- Bits of sweet corn kernels for the pop of yellow and sweetness.
- A few leaves of fresh lettuce for the green and freshness.
This is the ultimate fuss-free home lunch: it’s basically the comforting logic of a fishball soup, but with penne standing in for the usual bee hoon or mee. Boil up a light, clean broth (a little stock or even just the water the fish balls were cooked in, seasoned with salt and white pepper), drop in the pasta, fish balls and corn, and finish with lettuce that wilts gently in the heat. Ten minutes, one pot, almost no washing up.
Clean, light and easy. WFH lunches don’t need to be complicated when fish balls, pasta and corn already nail comfort with whatever’s in the cupboard.
