Why the DIY pasta variant works in Singapore:

The pesto base here was the right choice for the salmon + tomato + mozzarella combo. The basil-pine-nut-parmesan profile cuts through the richness of the salmon and the cream of the mozzarella, while the cherry tomatoes add the acid edge.

The sunflower seeds are a small detail that the better DIY pasta places do well. They add crunch without committing to nuts (allergen-friendly), and the mild nutty flavour layers over the pesto.
