What was on the tray:
- Dry mee pok: flat yellow egg noodles, tossed in the stallβs chilli-vinegar-soy-lard mix
- 5 white fishballs: standard round bouncy type, no hand-thrown premium
- 2 sliced fish cakes: thin discs with golden edges (lightly pan-grilled)
- Sliced shiitake mushrooms: rehydrated, dark brown, the mushroom sauce binder
- Minced pork crumb (bak chor): lightly seasoned with a touch of soy and shaoxing, scattered through
- Pork lard cubes (visible browns): scattered throughout for the textural punch
- Side bowl of clear soup: scallion-dotted, the lightener between dry mouthfuls
Hougang is a mature heartland HDB town with hawker centres at Hougang Mall, Kovan, Hougang 22 / Buangkok areas. The mee pok / BCM stalls in Hougang have been operating across generations, with some carrying on the originalist 1970s-1980s recipes.
What separates a $4 budget mee pok from a $6+ premium one:
- Premium tier: hand-thrown fishballs, sliced pig liver, kidney, more generous bak chor portion, sometimes prawns
- Budget tier ($4-$5): standard fishballs, fish cake, basic mince pork, sometimes shiitake mushrooms
- Both tiers: same noodle base, same dressing mix, same chilli sauce, same lard cubes
The choice between mee pok (flat) and mee kia (thin) is the stall regularsβ personal preference:
- Mee pok: more surface area, picks up more sauce, slightly heartier mouthfeel
- Mee kia: thinner, faster to cook, more delicate, sometimes preferred in soup version
- Most stalls offer both, the cook handles them slightly differently in the noodle pot
The sliced shiitake mushrooms here are a slightly distinctive touch. Not every mee pok stall includes them. Adds umami depth without raising the price much. Whoever runs this Hougang stall knows what theyβre doing.
