The gravy is the lighter brown sauce rather than the dark dish, cornstarch-thickened, savoury and clingy, the kind that coats the wide noodles without drowning them.

The shredded chicken is the base protein, hand-torn poached chicken that soaks up the gravy. The fried fish dumplings are the textural highlight, fish paste in a thin batter, fried crisp and added on top so they stay crunchy against the soft noodles, at least for the first few minutes before the gravy softens their undersides. Eat those first.
