What was on the tray ($6.50):
- A bowl of tonkotsu ramen: milky pork broth with a whole ajitama egg, naruto fishcake (the pink swirl), corn kernels, shredded nori, scallions and yellow noodles.
- A side dish of korokke (Japanese potato croquette) and fried floss fish.
- A small soya sauce ramekin.
Tonkotsu is the cloudy, milky-white ramen broth made by boiling pork bones hard for hours until the collagen and fat emulsify into the soup, giving it that rich, creamy body. Pulling that off at a hawker stall for $6.50 is the headline here, since most dedicated ramen chains charge $15 and up for the same style of bowl. The broth had genuine milky weight to it, clinging to the springy yellow noodles.
The toppings hit the classic notes: a whole ajitama (the marinated soft-centred egg, served whole rather than halved), the cheery pink-and-white naruto fishcake, sweet corn, nori and scallions. The side of crispy korokke and fried floss fish rounds it into a properly filling meal. Quality is very reasonable for the price.
Overall: 4.2 / 5. The broth had real milky body, the whole ajitama was a nice touch, and the classic toppings were all there. Great-value hawker ramen. 😋👍🏼
