What we had ($41.80++ total):

The Mad Sailors is at 778 North Bridge Road, on the Haji Lane stretch of Kampong Glam, a short walk from Bugis MRT. They spent four years away before reopening here in 2026, and the menu came back stripped down to what they do best: fish, chips and not much else. The whole menu is halal. They are closed on Tuesdays, so check before heading down.

Both plates arrive the same way, fish and chips on blue-and-white striped paper over a speckled ceramic plate, with a lemon wedge and a little steel pot of tartar sauce.

The batter fried up the way it should, thin and blistered and a deep gold, crackling as it broke to show the white fish underneath rather than sitting on it as a thick bready shell.

The chips are the part that separates this from the usual. They are hand-cut and triple-cooked, thick as your thumb, fluffy right through the middle with a hard crisp edge. Most places here default to shoestring fries, and these are a different thing entirely.

Between the two fish, the halibut came as one long fillet, firmer and a touch sweeter, holding together in meaty flakes. The haddock came as two folded pieces, softer and flakier, the more traditional chip-shop choice and the pricier of the two on the night.

The tartar sauce is worth using rather than ignoring: thick, flecked green with herbs and sharp enough to cut the fried batter.

Two fish and chips at this price is premium for Singapore, but the chips alone justify a fair bit of it.

Overall: 4 / 5. ๐Ÿ˜‹๐Ÿ‘๐Ÿผ Crisp thin batter, genuinely good hand-cut chips and a sharp tartar. The halibut is the better value of the two.
