We ordered:

Chicken wing rice roll is one of those small night market masterpieces of Taiwanese street food engineering. The chicken wing gets carefully deboned through one end while keeping the skin intact (the giveaway of proper skill — bad versions tear the skin and the rice spills out). The hollow wing then gets stuffed with cooked sticky rice (sometimes flavoured with mushroom, dried shrimp, or pork floss), then grilled over charcoal until the skin crisps up and the rice inside warms through.

This wing was the proper version. The skin was crispy-blistered from the charcoal heat, with the slight char marks on the surface. Inside, the sticky rice was packed tight, with the visible flecks of mushroom and dried shrimp through the rice mixture.

The eating technique is the bite. You hold the wing by the skinny end (the upper wing piece left for grip), bite through the skin and rice together. The contrast between crispy skin and chewy sticky rice is the entire eating experience. The chicken wing meat lines the rice cylinder, adding the chicken flavour underneath every bite.

A small dish of sweet-soy sauce on the side. Some stalls also offer a chilli sauce alongside. Both optional — the wing is flavoured enough that the dip is just an additional dimension.

NT$65 (~SGD $3) for one wing is honest night market pricing. The stalls running this dish at Shilin or Raohe night markets all hover around the NT$50-70 range.

Taipei night markets are where the small-scale street food engineering shines. The chicken wing rice roll is the kind of dish that requires specific stall-level skill that doesn’t translate to chain restaurants.
