Tuesday late lunch with BB — 板面 (ban mian) at $4. The Hakka hand-pulled flat-cut noodle dish, second visit this month.

We ordered:

Ban mian (板面) is the Hakka noodle dish where flat strips of hand-pulled wheat dough are dropped directly into a simmering pot of clear ikan bilis broth. The noodles cook in the broth as they’re added, absorbing the soup flavour while staying slightly chewy from the gluten development.

The broth was the clear ikan bilis-and-pork-bone base, white-pepper finish. Properly simmered down with anchovies and pork bones for the umami depth, then seasoned with white pepper and a splash of light soy.

Toppings included minced pork, sliced pork liver, blanched leafy greens, and a generous scattering of crispy ikan bilis, fried shallots and chopped spring onion. The standard hand-pulled ban mian topping spread.

The crispy ikan bilis on top is the underrated MVP. Salt, crunch, and concentrated fishy umami in one tiny addition.

A small dish of cut chillies in light soy on the side for the optional spice and sour-vinegar bite.

The ban mian format is one of those Hakka-Singapore dishes that’s quietly disappearing from the hawker scene as fewer aunties and uncles take over the stalls. Hand-pulling dough is labour-intensive, and the dish doesn’t trend the way other hawker classics do.

At $4 a bowl this is the standard hawker pricing for the format in 2019. The hand-pulled noodles command the small premium over machine-cut noodles because of the labour cost.

This was the second ban mian bowl this month at the same stall. The rotation through the regular dishes builds the familiarity with the stall’s specific preparation — which day they’re running fresh ikan bilis versus stored, which day the auntie has the kitchen energy for the larger portion.

Some hawker stalls are worth the repeat visits because the consistency is what makes them worth returning to. This stall earned that status.

Phase 2 hawker centres continue to deliver the best Singapore food value-per-dollar. The Hakka ban mian stalls have been steady through the years.
