Chicken & pork tacos with a mojito!
Soft tacos at a taqueria: shredded chicken and achiote pork on charred tortillas with onion, coriander and lime, with tortilla chips, guac and a mojito.
Taco night on the trip: BB and I split chicken and pork tacos with a mojito at a little taqueria. ๐ฎ๐
What we had:
- Chicken tacos: shredded chicken on a charred soft tortilla
- Pork tacos: achiote-red shredded pork (cochinita-style)
- Both topped with chopped onion, coriander and a squeeze of lime
- Tortilla chips with guacamole and salsa
- A mojito
These were the proper street-style tacos, served on soft flour tortillas blistered over a flame, folded around a generous pile of filling. The pork was the standout, slow-cooked and shredded with that orange achiote hue, deeply savoury and a little tangy, the kind you want a second of. The chicken was the milder, lighter one, juicy shreds that let the fresh toppings shine.
You finish each taco yourself: a scatter of raw onion and coriander, then a good squeeze of lime over the top, which brightens everything. On the side, crunchy tortilla chips for scooping fresh guacamole and a smoky salsa.
The mojito tied it together, cold, minty and limey, that herby sweetness cutting through the savoury tacos. A relaxed, sunny little meal.
