The Mexican food scene in Singapore has grown across the years, with multiple casual taquerias and Mexican-American spots opening across the residential and CBD neighbourhoods. The format ranges from the casual street-taco spots (focusing on the authentic Mexican street food preparation) to the Tex-Mex sit-down restaurants (focusing on the Americanised burrito-and-fajita format).
The chicken tacos were probably the standard Mexican format. Soft corn or flour tortillas filled with shredded or chopped chicken, topped with the standard taco accompaniments — chopped onion, cilantro, lime wedge, salsa or pico de gallo, sometimes cheese.
The proper Mexican street taco uses corn tortillas (smaller, slightly thicker than flour tortillas), with the filling kept simple to let the protein and the salsa speak. The American Tex-Mex variant uses flour tortillas (larger, soft) with more elaborate filling spreads.
The pork tacos were probably either carnitas (slow-cooked pulled pork) or al pastor (marinated pork stack cooked on a vertical rotisserie, sliced thin). Both styles are iconic Mexican street taco preparations.

The Mexican food category in Singapore varies in authenticity. Some spots focus on the proper street-taco recipes (with imported corn tortillas, authentic carnitas preparation, etc.); others run the casual Tex-Mex Americanised format. Both versions have their place.
