Brown sugar bubble milk is the tigersugar-style format — fresh milk poured over brown-sugar-coated tapioca pearls, with the dark sugar streaming down the inside of the cup in those iconic tiger-stripe patterns. No tea base in the classic version, just milk + pearls + brown sugar.
The drink works because the brown sugar coating on the pearls is the entire flavour vehicle. Each pearl is glazed in caramelised brown sugar so when you bite through, you get the dark molasses-y sweetness from the coating along with the chewy QQ pearl underneath. The fresh milk acts as a creamy base that smooths everything together.
The pearls were the test. Properly cooked — chewy bouncy without being chalky or over-soft, brown sugar coating still glossy when the cup arrived. Some chains let the pearls sit too long after cooking and they go gummy; this batch was made-to-order.
Bulk ordering three at once during lockdown made sense. The cups were sealed in their carrier, the rider made one trip, and we had a small bubble-tea inventory at home for the rest of the day.
