Monday's lunch!

Monday lunch — actually the second round of the day. The morning’s XLB and Sichuan dan dan spread at the hawker centre had been substantial, so this later home lunch was the lighter follow-up.

Today’s plate:

The afternoon’s lighter eating made sense after the morning’s heavier hawker order. We’d had soup dumplings, chilli wontons, dan dan noodles all in one stretch and we were still working through the chilli oil ma la when the second meal slot came around.

Hot rice base was the standard fluffy jasmine, smaller portion than usual to make room for the morning’s leftover stomach space.

Fried egg was the M-style sunny-side. Crispy white edges, runny golden yolk.

Stir-fried vegetables were a quick mix of cabbage and carrot with garlic and a splash of soy. Crunchy stems, lightly seasoned, no heavy seasoning.

The protein side was modest today — a small portion of something quick from the fridge.

The whole second-round plate was designed to balance the morning’s heavier hawker eating. After a meal that’s mostly chilli oil and pork, the afternoon plate skews toward greens, lighter starch, and milder seasoning. The body needs a reset before the next big meal.

Phase 2 era had given us the option of doing both home and hawker eating in the same day, which is exactly what the lockdown era had built up to. Hawker breakfast or lunch, home dinner. The split routine worked better than either format alone.

Lockdown habits taught us how to balance the day’s eating across multiple meal slots.
