Saturday late afternoon dessert — s’mores waffle. The American campfire-classic dessert reimagined as a cafe waffle.
We ordered:

S’mores is the American campfire dessert — graham crackers, melted chocolate, and toasted marshmallow sandwiched together. The s’mores waffle takes the three components (chocolate, marshmallow, graham cracker) and combines them into a single composed dessert built on a Belgian waffle base.
The waffle was the substantial component. Belgian-style waffle with deep square pockets, crispy on the outside, fluffy on the inside, served warm. The proper waffle execution requires fresh baking — by the time the waffle reaches the table the contrast between hot crispy exterior and fluffy interior should still be intact.
The s’mores toppings layered on top of the waffle:
- Melted chocolate (drizzled or as a chocolate ganache)
- Toasted marshmallow (either a melted layer or torched on top with the proper char marks)
- Crumbled graham cracker pieces scattered through
- Possibly a scoop of vanilla ice cream on the side
The combination eats as multiple textures and flavours layered together. The crispy waffle, the gooey melted chocolate, the soft toasted marshmallow, the crunchy graham cracker crumbs, the cold ice cream — each forkful brings different combinations of the components.
The toasted marshmallow was the headline. Proper s’mores requires the marshmallow to be torched until the surface goes golden-brown with slight char, while the interior stays soft and gooey. The contrast between charred outside and gooey inside is the defining s’mores texture experience.
The chocolate provides the rich depth, the graham cracker provides the crunch and the slightly cinnamon-honey flavour profile that ties s’mores to its American campfire origins.
The cafe waffle format scales the campfire dessert into a sit-down restaurant presentation. The base waffle gives the dessert structural support that the original cracker-sandwich format doesn’t have, allowing for more elaborate plating and the inclusion of ice cream as the additional component.
The Saturday late afternoon dessert slot is the right venue for an indulgent waffle. After the Tamoya lunch and the cafe tea break, the s’mores waffle is the small additional dessert that closes out the afternoon’s eating.
Phase 2 had restored the dessert cafe scene, and the s’mores waffle had become one of the trending dessert formats through 2020.
