Bukit Batok hawker dinner with BB. Saw the stall doing salted egg calamari Hokkien mee as a special and immediately had to try it.

We ordered:

This was a fun take on a classic. The Hokkien mee base had the right balance of yellow noodles and bee hoon, with a stock that still tasted of prawn and pork — not the dry, oily version you get when the stall cuts corners. Wok hei was there, faint but present.

The salted egg calamari was tossed in on top — crispy battered squid rings with that yellow curry-leaf foam clinging to them. It added a creamy, savoury kick on top of the noodles that I didn’t expect to work as well as it did. A squeeze of lime cut through everything.

The portion was generous for $5.50, especially in a city where this kind of fusion gets restaurant pricing. Hawker stall ingenuity at its best — they didn’t reinvent Hokkien mee, they just gave it a different jacket.

Overall: 4.3 / 5. 😋👍🏼 Worth the detour for the novelty alone, and the base noodles hold up too.
