Pad see ew (ผัดซีอิ๊ว) literally means “stir-fried with soy sauce”, and it’s the Thai cousin of our hor fun and char kway teow: wide flat rice noodles tossed hard in a screaming-hot wok with dark and light soy, egg, and greens until they pick up that smoky char (wok hei). What sets it apart from pad kee mao (the spicier drunken noodles with holy basil and chilli) is its simpler, savoury-sweet soy-forward profile, no chilli heat, just deep caramelised soy.
This plate had proper wok hei, the noodles slightly charred and glossy with dark soya, the egg ribbons and beansprouts giving softness and crunch. The fried chicken wing on the side is the bonus, crispy-skinned and a nice protein to round out the plate. At $7.50 all in, a tasty, value Thai hawker lunch.
Overall: 4.2 / 5. Noodles had real wok hei and dark soya depth, and the fried chicken wing was a great-value add-on. 😋👍🏼
