The century egg brings its dark, jammy, almost cheesy richness, the salted egg adds a savoury, grainy pop from the orange yolk, and the soft fresh egg poaches gently in the hot broth for a silky finish. The spinach (苗) is simmered until tender and gives the soup its earthy, slightly sweet base.
