Katsudon is the comfort-food classic where a tonkatsu (panko-crumbed pork cutlet) is simmered briefly with onions in a sweet-savoury dashi-soy-mirin sauce, then bound with beaten egg poured over the top and cooked just until it sets into soft, custardy folds. The whole thing is slid over a bowl of rice so the sauce and egg seep down into the grains. The trade-off, and the sign it’s done right, is that the cutlet goes from shatteringly crisp to tender at the edges while still holding some bite, which this one managed.

The beni shoga is the smart finishing touch, its sharp pink-ginger acidity cuts through the rich egg-and-pork, while the chuka wakame and crisp garden salad on the side keep the set feeling balanced rather than heavy. A satisfying, wallet-friendly Japanese lunch at under $10.
