IPPON is at stall #01-72 in the hawker centre inside Our Tampines Hub, 1 Tampines Walk, which is a couple of minutesβ walk from Tampines MRT. They do Japanese donburi and noodle bowls at hawker prices, and they are closed on Wednesdays, so check before making the trip.
Dry ramen means no broth in the bowl. Instead the ramen noodles sit under a thick spoonful of minced pork stew, dark and oily and heavily seasoned, which you toss through everything yourself. The noodles held their bite well under all that sauce.
Two thick slices of chashu came draped over one side, glazed to a deep lacquered brown and fatty enough to go soft against the warm noodles. In the middle, an onsen egg with the white just set and the yolk still loose, which breaks into the sauce and takes the edge off the saltiness.
Around the rim were the parts that keep each mouthful different: shredded black fungus for crunch, a mound of crisp fried shallots, a pile of beni shoga (red pickled ginger) for a sharp sour bite, and a scatter of spring onion.
Dine-in orders come with a complimentary miso soup, which arrived in a little red lacquer bowl and is worth sipping between mouthfuls since the noodles themselves are on the rich side.
At $7.50 for a bowl this loaded, it undercuts what a ramen shop upstairs in the mall would charge for something similar. Next visit I want to try the Ippon Pork Rice Bowl, or the Spicy Dry Ramen at $6.80.
Overall: 4 / 5. πππΌ Springy noodles, a savoury minced pork stew and that runny onsen egg tying it together. Would re-order.
