Tai Seng Fish Soup started at Taman Jurong Food Centre, where it earned its Michelin Bib Gourmand, and this bowl came from their outlet at Hawkersβ Street, the food court in the basement of TANGS at Tang Plaza on Orchard Road. That basement was redone in 2025 and the food court pulled in a handful of Michelin Guide names, so you can get a hawker bowl like this without leaving Orchard, which is not something you could say a few years ago.
The order is worth knowing: the mixed fish soup comes in three sizes, and you add your carb separately, either thick bee hoon or porridge. βMixedβ means you get both the fried fish and the sliced fish in one bowl instead of picking a side.
The broth is the reason to come. It arrives cloudy and milky white, cooked down long enough to taste sweet and rounded rather than simply salty, rich in the mouth but still clean enough that you keep going back for another spoonful.
The bowl was generously loaded. The fried fish came in a light, craggy golden batter, its edges slowly softening where they sat in the soup, next to smooth sliced fish poached just through. Around them were cubes of soft tofu, sweet cabbage, wedges of tomato, leafy greens, and the fat, slippery thick bee hoon soaking everything up.
The detail that lifts it is the crown of crispy fried egg floss, fine strands of egg dropped into hot oil so they set into a golden nest. It stays crunchy a good while before melting into the soup, adding a nutty bite against all the soft things in the bowl.
At $9.50 in Orchard this is a hearty, comforting one-bowl meal. Good to know it is down there.
