What was in the bowl ($7.50 M):
- Orange-red prawn stock broth — deeply concentrated prawn-shell base.
- 3 large prawns (head + shell on) cut/butterflied open.
- Pork ribs chunks on the right.
- Kway teow flat noodles as the carb.
SG prawn mee soup version — the deep orange-red broth is the test. Proper stalls boil prawn heads + shells for hours to extract the umami-orange. Without that, just oily noodle water.
3 prawns + pork ribs at $7.50 = mid-tier prawn mee pricing. Most stalls charge $5-6 for 2 prawns no ribs, $8-10 for the premium version.
Overall: 4.3 / 5. Prawn stock had proper depth + colour, prawns were sweet + fresh, pork ribs were tender, kway teow soaked the broth. Solid prawn mee. 😋👍🏼
