The “Taiwan milk tea” naming on Singapore bubble tea menus refers to the brewing style that the Taipei chains popularised — strong black tea brewed long enough to develop the proper bitter-sweet depth, then mixed with fresh milk and a moderate sweetener. Different from the Hong Kong-style milk tea (which uses evaporated milk) or the Indian masala chai (which uses spices), the Taiwan-style is the cleaner straightforward milk-tea profile.
The brown sugar pearls are the upgrade. Standard tapioca pearls boiled in plain water; brown sugar pearls boiled in brown sugar syrup so the dark caramelised sugar soaks into the pearls during the cooking. The pearls come out with the dark brown colour, the slight caramel-molasses sweetness, and the proper QQ chewy texture.

The pearls were properly cooked QQ chewy texture. Each one had the bouncy bite when you chew through, with the brown sugar coating providing the intense caramel-molasses sweetness against the tea base.
Sunday bubble tea pickups are part of the weekend rotation. The mid-tier specialty shops give us the variety across the weekend afternoons.
We sat at the small cafe table area attached to the bubble tea shop, drank slow, watched the Sunday afternoon crowd cycle through.
