The set composition varied by restaurant but typically included:

The starter was the lighter opener. Probably a small soup (clear chicken broth or sweet pumpkin soup) or a small appetiser plate (cold pickled vegetables, sliced century egg, tofu).
Mains were the central event. The Taiwanese sit-down restaurant set usually has three mains in the format — one substantial protein dish (sweet-and-sour pork, three-cup chicken, or beef stir-fry), one vegetable dish (stir-fried greens with garlic, braised eggplant, or chinese kale), and one seafood option (steamed fish, salt-and-pepper shrimp, or oyster omelette).
