This is the dish I never tire of, and a $4 neighbourhood bowl hits the spot just as well as the famous ones. The yellow noodles came tossed in that signature dressing of dark sauce, chilli and vinegar, tangy and savoury with a bit of heat, the kind that has you mixing it all up to coat every strand.
Piled on top were plenty of savoury minced pork and slices of springy fishcake, with chopped spring onion through it. The bowl of soup on the side held bouncy fishballs and meatballs in a clear, light broth, which you sip between mouthfuls to balance the tang of the noodles.
A spoon of the cut chilli on the side adds more kick if you want it. Toss, slurp, alternate with the soup: simple, sharp, savoury and very satisfying. Honest comfort food for four dollars, and proof a good local stall is all you really need.
