This is the Singapore-Hainanese style of beef noodles (็่็ฒ), which is quite different from a Taiwanese beef noodle soup or a Vietnamese pho. Here the noodles come โdryโ, coated in a glossy, dark gravy thickened with cornstarch and sweetened with a touch of soy and spices, so every strand is slick and savoury-sweet. The beef balls are the springy, bouncy highlight, and the tender beef slices add the meaty depth.
The fresh stuff on top is what keeps it from feeling heavy: crunchy beansprouts, fragrant coriander and celery cut through the rich gravy. On the side, a bowl of clear beef broth lets you alternate between the thick, sauced noodles and a clean, warming sip, the proper way to eat this dish. A dash of the chilli sauce gives it a kick.
At just $4 a bowl, this is honest, old-school hawker comfort, generous and full of flavour for the price.
