The three siu mei components:
Roast duck (烧鸭) — Cantonese-style whole duck preparation. Marinated with 5-spice + soy + maltose, air-dried for the skin structure, then roasted in the Chinese roast oven. The signature crispy mahogany-amber skin + tender meat + the proper rendered fat layer underneath.
Char siu (叉烧) — honey-glazed roast pork shoulder/loin. The signature red marinade (maltose + honey + Chinese rose wine + 5-spice + fermented bean curd + soy + sugar + food colouring) produces the caramelised exterior with the proper char patches.
