The almond crust technique provides the proper textural contrast. Crispy nutty exterior + flaky tender salmon interior = the proper Western fish preparation that elevates the basic grilled salmon format.

At $45++ for the two-mains spread, this represents proper mid-tier Western sit-down dining. Different from casual Western ($25-35 for two mains) or fine dining ($80-150 for similar quality), the mid-tier sit-down sweet spot.
