We ordered:

Kolo mee is the Sarawak (Borneo / East Malaysia) noodle dish that’s the regional specialty of the area. Different from the more widely-distributed Singapore wanton mee or Penang Hokkien mee, kolo mee is the East Malaysian Chinese noodle style that comes from the Sarawak Chinese immigrant communities.

The defining characteristics of kolo mee:

The noodles were the foundation. Thin springy egg noodles cooked to firmness, with the proper QQ chewy texture. Different from the standard Singapore wanton mee which uses slightly thicker noodles, kolo mee noodles are noticeably finer.

The minced pork topping was the headline. Seasoned minced pork (probably with soy, garlic, and a touch of five-spice), stir-fried until brown. Each spoonful of noodles comes up with bits of the minced pork mixed in, creating the integrated noodle-and-meat eating experience.

Char siew slices on top provided the Cantonese roast pork component. Thinly sliced, with the proper caramelised edge and the sweet-soy lacquer.

The shallot oil is the dish’s defining aroma. Crispy fried shallots (the kind that pop and crisp when added to hot oil) with their rendered oil drizzled over the noodles. The shallot aroma is the first thing that hits when the bowl arrives at the table.

The light seasoning (soy + vinegar) is different from the heavier sweet-soy that defines Singapore wanton mee. The cleaner profile lets the noodle-and-shallot-oil combination be the focus.

A side bowl of clear soup with a few pork balls or wontons completes the standard format.

At $4 a plate this is fair hawker pricing for the Sarawak-style noodle dish. Kolo mee stalls are rare in Singapore (the dish requires the specific Sarawak culinary background), so finding a proper version at hawker pricing is worth noting.
