Tze char (煮炒) is the Cantonese-Singapore dinner format that puts multiple stir-fried and braised dishes on the table for family-style sharing. The format is the proper Singapore Chinese dinner — the dishes are individually substantial, the wok hei is real, and the pricing is hawker-tier even for the substantial spread.

The tze char format works because each dish is wok-cooked to order. The kitchen runs multiple woks in parallel, with the dishes hitting the table in sequence over 15-30 minutes. The freshness of each dish is the format’s defining quality.

The fish was probably the headline. Singapore tze char stalls typically run live fish from tanks at the front of the stall — you pick the fish, the kitchen kills and cooks it to order.
