Tze char (煮炒) is the Cantonese-Singapore dinner format that puts multiple stir-fried and braised dishes on the table for family-style sharing. The format is the proper Singapore Chinese dinner — the dishes are individually substantial, the wok hei is real, and the pricing is hawker-tier even for the substantial spread.
The spread probably included some combination of the standard tze char menu:
- A whole steamed fish (probably steamed with ginger-and-scallion in the Cantonese style)
- A wok-fried vegetable (kai lan with garlic, sambal kang kong, or sweet potato leaves)
- A meat dish (sweet-and-sour pork, kung pao chicken, or salt-and-pepper pork ribs)
- A seafood dish (cereal prawns, salted egg yolk fish, or stir-fried squid)
