Da Shi Jia sits at 89 Killiney Road, a short walk from Somerset MRT just off Orchard. It is a next-gen prawn mee stall run by the family behind the Big Eater zi char group, and it built its name fast on this one signature plate.
What we had:

The name says โwhiteโ bee hoon, but the noodles arrive stained a glorious orange. That is because the stock is built from prawns rather than the usual chicken or pork, so as it reduces into the bee hoon it soaks every strand in deep, sweet prawn flavour, finished with that smoky wok hei char from a screaming-hot wok. The result tastes like the very essence of prawn.
The prawns themselves were the other reason to come: big, fresh and snappy, peeled easily and stayed sweet. A dab of the cut chilli on the side lifts each bite, and the clear soup resets the palate between mouthfuls.
It lives up to the hype. For prawn bee hoon done at this level, $16.80 is more than fair, and I would happily queue again.
