A tze char favourite I always look forward to: 招牌白米粉 (signature white bee hoon), $6. 😋

What I had:

This is the dish that has earned “signature” status at so many tze char stalls, and a good plate of it is special. The bee hoon (thin rice vermicelli) is first wok-fried for that smoky wok hei, then braised in a stock until it soaks up all the flavour and the whole plate turns saucy and a little creamy, that pale, milky gravy pooling around the noodles.

The seafood is what lifts it. Sweet, plump prawns and a generous scatter of clams release their briny juices into the gravy as they cook, so every strand tastes of the sea, and there is cabbage wilted through to soak up the sauce. You eat it with a spoon to scoop up all that lovely gravy.

It is rich, savoury and deeply comforting, the kind of plate you slow down for and finish to the last spoonful of sauce. For seafood bee hoon this good, $6 is a steal.

Overall: 4.8 / 5. 😋👍🏼 Smoky, milky bee hoon soaked in seafood gravy with sweet prawns and clams. Would re-visit.
