These are the chunky, soft-centred cookies that took over cafes, big, thick discs that stay gooey in the middle. The white chocolate speculoos was our pick (hence two of them): the dough carries that spiced, caramelised Biscoff-biscuit flavour, all cinnamon and brown-sugar warmth, studded with sweet, creamy white chocolate that melts into the soft centre. The speculoos spice keeps the white chocolate from being cloying, a really good pairing.
The salted butterscotch was the variety pick, a buttery brown-sugar cookie with butterscotch and a hit of sea salt. That salt is the key: it cuts the sweetness and amps up the caramel-butterscotch flavour, giving it a more grown-up, moreish edge.
