The banana pie is one of those small bakery items that doesn’t get the attention of the more famous banana cake but delivers a different format of the same banana-sweet experience. Instead of the soft moist banana cake crumb, the banana pie uses crispy filo or shortcrust pastry to wrap the banana filling, creating a contrasting crispy-pastry / soft-banana-filling combination.
The pie format varies by bakery. Some use a traditional pie crust (shortcrust pastry, baked in individual ramekins or pie tins). Others use filo pastry (thin layered pastry sheets, brushed with butter and folded into triangular parcels). The filo version is the more snack-friendly format because each parcel is portable and finishable in 2-3 bites.
This box came with what looks like the filo-style parcels — small triangular pastries with golden-brown baked exteriors and visible banana-and-brown-sugar filling inside. The pastry would be the crispy-flaky variety that filo always provides when properly butter-brushed and baked.
The filling was the headline. Ripe banana (the very-ripe black-skin variety with maximum sweetness) sliced or mashed, mixed with brown sugar and sometimes cinnamon, baked inside the pastry shell. The banana caramelises slightly during the bake, intensifying the sweetness and creating a jammy filling consistency.
The combination eats as the warm crispy-pastry-meets-jammy-banana-filling formula. Best eaten warm — either fresh from the oven or warmed slightly in a low oven for 5 minutes before eating.
A box typically contains 8-12 small pies, depending on the bakery’s count. At $10 per box this is roughly $1 per pie, which is fair pricing for small artisan bakery items.
The pies got distributed across the weekend — a few eaten immediately, the rest stored for later. They keep well for 2-3 days at room temperature, with the pastry slightly softening over time.
Phase 2 had restored the artisan bakery scene to full operation, and small bakery pickups had become one of the regular weekend rituals.
