Cantonese pork porridge (粥) is the slow-cooked rice porridge that’s been simmered down until the grains break apart and the rice becomes a creamy-thick consistency. The good versions take hours of simmering — you can’t rush porridge into a proper texture, the rice has to disintegrate properly to release its starches.
This delivery bowl was the proper version. The porridge had the right consistency — thick enough to hold a spoon upright but not gluey, with the rice grains nearly invisible because they’d dissolved into the broth during the cook. The texture was velvety rather than chunky.
The pork was the substantial topping. Sliced pork (lean and slightly fatty), poached in the porridge so it stayed tender and absorbed the porridge flavour. Small bits of preserved vegetable (chai poh) added the umami salt component. Chopped scallion and crispy fried shallots on top for the texture-and-aroma finish.
The chinese fried dough fritter (you tiao) came in a separate small bag, kept dry until you’re ready to eat. Break it into pieces, drop into the hot porridge, eat fast before the dough goes soggy from the soaking. The crisp-to-plush transition is the eating ritual.
A small ramekin of light soy sauce and another of white pepper came on the side. Spoonful of white pepper into the porridge is the proper finishing seasoning — adds warmth and aromatic spice without the heaviness of black pepper.
$15 for a sharing portion of pork porridge delivery is fair pricing. Sit-down equivalent would be similar.
Porridge is the right kind of comfort food for grey weather. Both of us were down with mild colds, and the warm slow-cooked rice was the gentle restorative meal that bodies want when they’re slightly off.
