We ordered:

Sicilian pistachio is the gold standard of pistachio gelato. The pistachios from Bronte (a town on the slopes of Mount Etna) have a more intense colour, more concentrated nutty flavour, and a higher oil content than the standard Iranian or Turkish pistachios most gelato shops use. The Bronte pistachios have DOP (Protected Designation of Origin) status and cost roughly 3-5x more than the standard varieties.
This scoop was the proper version. Pale brown-green colour (not the radioactive lime green of artificial pistachio flavourings), with visible flecks of ground pistachio through the body of the gelato. The aroma off the cup was the warm, toasted-nut perfume that you only get when the gelato shop is using real Bronte pistachio paste rather than a generic pistachio paste.
The flavour profile was dense. Bronte pistachios have a deeper bitter-nutty edge that the milder varieties don’t, and that bitterness is the whole point — it’s what differentiates “real pistachio” from “vague pistachio essence”. Each spoonful had that proper depth, with the cream base supporting rather than masking the nut.
Texture was the proper gelato consistency — denser than American ice cream, slow-melting, with that creamy mouthfeel from the lower air content during the churn.
At $6 for a single scoop of Sicilian pistachio this is fair premium gelato pricing. The standard pistachio at most gelato shops runs $4-5; the proper Sicilian variant commands the $1-2 premium because the ingredient cost difference is real.
We sat at a small table near the counter, ate slow, savoured each spoonful. Bronte pistachio gelato is the kind of scoop you don’t rush.
