Wednesday lunch with BB — finally back at Tamoya after weeks of trying to home-cook our way to their sanuki udon. The Burpple Beyond deal at $14.55 for the sanuki beef egg udon + drink set was the right entry point for the return-to-dine-in visit.
We ordered:

Tamoya’s claim to fame is the sanuki-style chew. Thick, square-cut, hand-cut udon made fresh on-site daily, with the kind of springy bite that the vacuum-packed grocery version (which we’ve been cooking with at home) can only approximate. Side-by-side with our home version, the real thing is noticeably bouncier and more elastic.
The dashi broth was the rest of the truth. Tamoya’s stock has that specific kombu-bonito-mirin depth that I’ve been trying to replicate at home. The amber colour, the slight sweetness, the way it coats the noodle without going salty — it’s all there. Worth the trip to taste the real reference.
The beef topping was thin slices in a sweet-soy glaze (gyudon-style), tender, with the beef juices running into the dashi as you mix. A whole soft egg yolk sat on top — break it, stir, and the whole bowl thickens into the silky noodle bowl that’s basically Tamoya’s signature.
Counter-service format meant we picked up tempura sides from a tray at the cashier — a couple of pieces for the table.
Drink was a free side via the Burpple Beyond set — cold green tea, refillable.
At $14.55 with a drink via Burpple Beyond, this is excellent value. Full price for the same set runs closer to $19. Burpple Beyond subscriptions have continued paying for themselves at spots like Tamoya.
We were back at the real Tamoya, which was both a relief and a reset for the home-cook practice.
