Chi Cha San Chen (吃茶三千) is the Taiwanese tea house that plays the specialty-coffee game with tea: single-origin Taiwanese leaves, an in-house “tea sommelier” framing, and brewing on a machine that pressure-extracts each cup to order rather than holding vats of brewed tea. Founded in Taichung, the Clarke Quay branch was its Singapore flagship.
Dong ding oolong is the flex here: a classic Taiwanese high-mountain-style oolong from the Dong Ding region of Nantou, medium-roasted, with the buttery-floral body that survives milk.
