Its signature is the thyme-infused waffle cone, baked with thyme so it carries a faint herbal, almost savoury edge that plays against the sweet gelato, a small detail that has become the brand’s calling card.
The pistachio is the premium flavour, and the test of any pistachio gelato is whether it tastes of real roasted nuts or of green almond essence. This one had genuine pistachio depth, earthy and nutty, the kind that comes from actual nut paste rather than flavouring and food colouring. It is the richer, more grown-up scoop on the menu.
