Ramen Story is the affordable Singaporean-style ramen shop helmed by chef Alexander Kong, whose ramen journey stretches back to 2008. The Black Gold King is their flagship. The broth is slow-cooked chicken bones with black garlic oil, giving it that distinctive dark colour and the deep, slightly bitter edge you’d expect from a proper mayu (burnt garlic oil) treatment.

The broth is the star: viscous, deeply roasted, the black garlic notes building to a slow burn that doesn’t overwhelm the chicken-bone base. Different from the standard tonkotsu most SG ramen joints push. The chilli threads add a gentle heat that pairs with the umami of the garlic oil. Noodles were medium-thick, springy, held up well in the thick broth without going soft. ✅

The ajitama was on point: set white, runny orange centre, marinated through. The dumplings folded into the bowl added textural contrast. Pork chashu was thin-sliced, lightly torched, leaning lean rather than fatty.

How to get there: Fortune Centre, 190 Middle Road. Closest MRT is Bugis (DT/EW lines), about 5 min walk. Fortune Centre is a slightly older mall but well-known for vegetarian and Japanese food gems on the upper floors.

Versus other SG ramen shops doing black garlic: Ramen Champion at Bugis+ has their own version, and Konjiki Hototogisu plays in the premium tonkotsu space. Ramen Story sits in the affordable speciality tier: chef-led, distinctive broth identity, decent price for a full-meal bowl.

Overall: 4.2 / 5. 😋👍🏼 Solid black garlic ramen, would re-visit for the other broths on the menu.
