The stall is in the Kopitiam food court on Level 4 of Tampines Mall, 4 Tampines Central 5, a minute from Tampines MRT. Its bowls are stamped 农家正宗鱼汤, which is roughly “farmhouse authentic fish soup”, and that tells you what to expect: the Teochew-style bowl rather than anything fancy.
The broth arrived pale and milky, which in a fish soup means evaporated milk stirred into the stock. It softens the edge of the fish and gives the soup body, and here it had not been overdone, so it stayed savoury rather than turning creamy and heavy.
The fish was the fried kind rather than sliced raw fish poached in the broth. Thick pieces in a light batter, gone golden and craggy, with the coating already starting to drink up the soup by the time it reached the table. Eat those first while the outside still has some structure to it.
The preserved vegetable is what makes this version worth ordering over the plain one. Salted mustard greens bring a sharp, sour, tangy note that cuts straight through the milky broth, and without it a bowl this rich would get cloying halfway down.
Underneath were ee mian, the flat crinkly egg noodles, soft and soaking up broth. Also in the bowl: soft tofu, sliced tomato, celery leaves, spring onion and a scatter of fried shallots.
