What we had ($13.90):

Back at Eat 3 Bowls in Compass One, B1-17, by Sengkang MRT. Last time we shared the three-bowl set between us; this time I went for the single set instead, which is the easier order if you just want one thing done well plus something to wash it down.

Everything arrives on a bamboo board in their own crockery, white bowls with a thin black rim and the 呷三碗 mark stamped on them.

The braised pork rice is the dish the place is named for and the one to judge them on. The pork is diced rather than minced, so you get distinct little cubes of belly with the fat cooked down until it goes translucent and slippery instead of chewy. It is stewed in soy and five spice until dark and glossy, then spooned over short-grain white rice with a pinch of spring onion on top.

The ratio is the thing they get right. There is enough sauce to run down into the rice and season the grains underneath, but not so much that the bowl turns into a puddle, so the rice keeps its texture to the end.

The soup is a clear one with chunks of winter melon gone soft and translucent, and spring onion through it. It is barely seasoned on purpose, and after a few mouthfuls of the rich pork that is exactly what you want alongside.

The set also comes with a drink, which arrived iced in their takeaway cup.

Overall: 4.1 / 5. 😋👍🏼 Glossy diced pork belly, well-judged sauce and a clean soup to cut it. The single set is the better order if you are on your own.
