58 Prawn Noodle is in the See Beh Ho Eating House at Blk 704 Bedok Reservoir Road. They sell two things, prawn noodles and minced meat noodles, and nothing else, which is usually a good sign. They open early and close by early afternoon, and they shut on Mondays, so this is a breakfast or early lunch trip rather than a dinner one.
Ordering the pork ribs version gets you both proteins in one bowl, and at $7.50 that is the order to make.
The broth is the whole point. Dark amber and glossy with a slick of oil on top, boiled down from prawn heads and pork bones until it turns sweet-savoury rather than just salty. It has that lingering prawn depth that only comes from the heads going in.
In it were halved prawns, shelled and sweet, sitting alongside soft pork ribs that came away from the bone without a fight, plus slices of lean pork.
The noodles were a mix of thick bee hoon and flat noodles, which is the combination worth asking for: the thick bee hoon holds the broth, the flat ones carry it. Bean sprouts and kangkong went in for crunch and greenery.
Then the part people come for, a generous scatter of crispy pork lard over the top, still crunchy and dissolving a little into the soup as you go.
Overall: 4 / 5. 😋👍🏼 Deep prawn-and-pork broth, tender ribs and plenty of lard. Worth getting there before they close.
