OMMA is at #01-35 in the food centre at 84 Marine Parade Central. The stall does Korean chicken soup in the samgyetang style at hawker prices, and it was started by two chefs who previously worked in a Michelin-starred Korean restaurant kitchen. The menu is built on three broths, ginseng, collagen and spicy collagen, and you pick whether you want it as the full soup, with mee sua, or as porridge.

The collagen version is the one to start with. The broth came out pale and cloudy, thickened from long simmering rather than from any starch, and it has that faintly sticky feel on the lips that tells you it has been on the stove for hours. It is gentle and clean rather than punchy, and there is no MSG in it, so what you taste is chicken.

In the bowl: a bone-in piece of chicken, skin on and falling off the bone with a nudge of the spoon; a whole jujube (red date) that sweetens the broth as it steeps; scattered goji berries; and soft cloves of garlic cooked down until they go mild and buttery. Shredded spring onion goes over the top for a bit of sharpness.

The seventy cents for mee sua is the best value decision on the menu. The thin wheat noodles go in and soak up the broth, and they turn the soup from a light bowl into something that actually fills you up. A small dish of kimchi came alongside, sour and cold, which is the contrast this needs.

Overall: 4.5 / 5. ๐Ÿ˜‹๐Ÿ‘๐Ÿผ Silky collagen broth, tender chicken and seventy-cent noodles that make it a full meal. Would come back for the spicy collagen.
