What was in the bowl ($5):
- Yellow lor mee noodles (thick yellow mee) swimming in deep dark brown thick gravy — the signature starchy braised pork gravy.
- Crispy panko-fried chicken pieces in chunks across the bowl — the breadcrumb coating already absorbing the gravy on contact.
- Crispy fried fish chunks mixed in — same fried treatment, lighter batter style.
- A dollop of minced garlic in the centre — the lor mee signature condiment.
Lor mee is the underrated SG hawker noodle — yellow mee in a thick dark starchy gravy made from braised pork stock + cornstarch + dark soya. The gravy is the whole point — you want it thick enough to coat the noodles but not gluey.
Fried fish + chicken is the upgraded topping combo — most lor mee comes with braised pork + hard-boiled egg + ngoh hiang slices. The fried versions add crispy-soggy contrast that develops over the meal: first few bites the breading is crispy, later bites it’s fully soaked into a different texture.
Minced garlic + black vinegar (drizzled on later, traditional add) cuts through the gravy richness — without those it goes one-note.
