Wednesday dinner with BB at Tampopo — the long-running Japanese ramen chain that’s been doing the Kurobuta black pig formula in Singapore for years. 1-for-1 promo on the deluxe shabu ramen, which is the bowl I always default to anyway.

We ordered:

The deluxe bowl is Tampopo’s flagship — thick rich tonkotsu broth simmered down from pork bones until it goes opaque-cream coloured, topped with thinly sliced Kurobuta (Berkshire black pig) pork that’s shabu-shabu cooked right at the table by dunking each slice into the bubbling broth.

The Kurobuta is the headline. Black pig pork is fattier and more flavourful than commodity pork, with a distinctly sweet finish. Thin shabu-shabu slices cook in seconds — you watch the pink go grey-pink, then fish them out before they go grey. Each slice picks up broth flavour as it cooks.

The tonkotsu base had real depth — long-simmered pork bone collagen made it slightly viscous, with the white sesame seeds, chopped scallion, and a few slices of menma (bamboo shoot) on top. Noodles were medium-thick, slightly wavy, with the bite that holds up to the heavy broth.

A soft-boiled ajitsuke tamago (marinated soy egg) is mandatory in this bowl — split it open, let the runny yolk gold-thread the broth.

$17.80++ for two via 1-for-1 is excellent ramen-chain pricing — full price each is closer to $22++.

Overall: 4.5 / 5. 😋👍🏼 Tampopo deluxe is a reliable ramen — would chase the promo again.
