Lunch — Shu Heng abalone bi tai mak at $6.80, Chinatown. The mouse-tail noodle bowl with the bonus abalone. 😋
What was in the pink bowl ($6.80):
- Bi tai mak (银针粉 / silver pin noodles) — the short stub-shaped rice noodles, “mouse tail” style.
- Mini abalone in the centre (yellow shell, white meat) — the premium topping.
- Sliced fishcake + black mushroom slices.
- Minced pork scattered all around.
- Lettuce leaves for green.
- Side bowl of clear pork broth at the top.
Bi tai mak (鼻态麼) literally = “nose-tail noodle” or “mouse tail” — short stubby rice noodles, ~3-4cm long, pointed at both ends. Hand-pinched or extruded into shape. Common in HK + SG-Cantonese hawkers.
Shu Heng = SG hawker chain specialising in abalone + minced pork bi tai mak. The mini abalone topping is the premium upgrade that distinguishes the chain.
Mini abalone at this price = canned/frozen mini abalone (not fresh restaurant-grade). Still adds the premium-feel + chewy bite. Real luxury fresh abalone runs $20+ per piece.
Overall: 4.2 / 5. Bi tai mak had the proper chewy stub texture, mini abalone was the bonus premium, minced pork was generous. Underrated SG hawker style. 😋👍🏼
