Tsuta Japanese Soba Noodles (Michelin star)

Dinner at Tsuta, the Michelin-starred ramen, at Pacific Plaza: the Ajitama Shoyu Soba ($16.80) with truffle and the Ajitama Miso Soba ($17.80). We preferred the shoyu.

Tsuta Japanese Soba Noodles (Michelin star)

Dinner at Tsuta, with a mini queue, we waited about 20 minutes! πŸ˜‹

Tsuta (蔦) made history as the world’s first Michelin-starred ramen shop, earning a star in the Tokyo guide, and the Singapore outlet at Pacific Plaza brought that bowl here. The signature is a refined shoyu (soy) soba finished with truffle oil, an upscale, aromatic take on ramen that is a world away from the heavy tonkotsu shops.

Order via the self-service machine, then take a seat:

The one-page menu:

The utensils set up on a wooden tray, a tidy, considered presentation:

Ajitama Shoyu Soba ($16.80), not too bad, the soy-based broth finished with truffle, the aroma the signature flourish. We preferred this over the miso base, the truffle and the clean shoyu suit the delicate, refined style Tsuta is known for.

Ajitama Miso Soba ($17.80), a tad bit salty for us, the miso base heavier and more savoury, though that is partly down to preference.

A refined, truffle-scented bowl that lives up to its Michelin reputation, the shoyu the one to order.

Overall: 4.3 / 5. πŸ˜‹πŸ‘πŸΌ The truffle-finished Ajitama Shoyu Soba was the standout. Would re-visit.
