What we had ($20 for two):

A Noodle Story is run by two Singaporean chefs with fine-dining training, and it shows in how a $10 hawker bowl is plated. The noodles are springy egg noodles tossed in their savoury house sauce, and piled on top is the whole crew: slices of slow-braised char siu, a tangle of crispy fried wonton skin, soft pillowy dumplings, fine threads of red chilli and spring onion, and the part everyone comes for, the Idaho potato-wrapped prawn, a fat prawn spun in a spiral of crisp shoestring potato on a skewer.

You toss everything together so the sauce coats the noodles, then alternate bites with the clear, sweet shrimp wonton soup on the side to reset the palate. The crunchy potato prawn against the springy noodles and tender char siu is genuinely clever, a fine-dining idea squeezed into a hawker bowl.

It is at Amoy Street Food Centre near Tanjong Pagar and Telok Ayer, so the lunch queue gets long, worth going early. For $10 a bowl this is one of the best-value Michelin-listed meals in town.

Overall: 4.5 / 5. ๐Ÿ˜‹๐Ÿ‘๐Ÿผ Springy sauced noodles, melting char siu and that crispy potato-wrapped prawn, a Bib Gourmand bowl that earns it. Would re-visit.
